Lamb Meatballs with summer salad & tzatziki {recipe}

1/2 lb ground lamb

1/2 lb ground beef

2 tbsp curry powder

1 tbsp cumin

1 tbsp garlic powder

salt and pepper (as desired)

olive oil



cucumbers, peeled and quartered

roma tomatoes, quartered

feta cheese, crumbled

salt and pepper

olive oil and red wine vinegar to dress



1 cup greek yogurt

1 cucumber, peeled and grated

1/2 cup feta cheese, crumbled 

2 tsp dill, chopped

1 tsp lemon juice

salt and pepper 



1. Preheat oven to 300 degrees. In a large bowl, mix together ground lamb and ground beef and seasonings. Heat olive oil in a large skillet over medium high heat. Make meatballs (or small slider patties) and sear 2-3 minutes minutes each side. Once seared, put skillet into preheated oven to continue to cook for the next 15-20 minutes while you finish the remainder of the recipe.

2. Prepare ingredients for the salad and toss all together in a bowl. Dress with olive oil and vinegar. 

3. Peel cucumber and grate (using a cheese grater) onto a paper towel. Put another paper towel on top and let sit for 5 minutes to removed as much water as possible. Put greek yogurt, cucumber, feta cheese, dill and lemon juice in a medium bowl and season with salt and pepper. Mix well.
