Barbacoa Beef for Tacos

Tacos are a weekly occurrence in our house so I'm always looking for new ways to create one of our favorite dishes. This barbacoa beef recipe is a copy cat from Chipotle and tastes very close to the original! The best thing about this recipe is it is super duper easy!! Throw it all in a crock pot (or a dutch oven) and you are literally done until 6 hours. Chop a few veggies and have everyone build their own tacos. See super, duper easy right?


If tacos aren't your thing, you can always serve this on a salad! If you're like my husband you can just eat it straight out of a bowl all by itself!

Serves 6 people

Serve Southwest Jalapeño Poppers as a side (recipe coming soon!)



3 lbs chuck roast, cubed

1 can chipotles in adobo sauce

1/2 c beef stock

1 tbsp ACV

2 tbsp lime juice

5 cloves of garlic, smashed

2 tsp of each - black pepper, salt, cumin, oregano, red pepper, garlic powder

your choice of ingredients for tacos



1. Put all ingredients into crock pot, stir to combine, and cook over medium high heat for 6 hours. 

2. Once cooked, shred with two forks and serve on taco shells with your choice of toppings.
