This is a quick and easy, but super flavorful, healthy meal. Perfect for the weeknight. This specific recipe will feed 4!
2 lbs ground beef
3 cloves garlic, minced
1/2 onion, diced
1 tbsp olive oil
salt and pepper
1 tbsp thai chili paste
3-4 sweet baby bell peppers, chopped
a handful basil leaves, chopped
green onions, chopped
lettuce cups (Bibb or Living Lettuce make the best cups)
**serve with sriracha or chili garlic sauce
1. Heat olive oil in skillet over medium heat. Add diced onion and sauté for 5 minutes. Add garlic and saute until onions are translucent and garlic is fragrant.
2. Add ground beef to skillet and season with salt and pepper. Continue to cook until brown, but not completely cooked through. Add in chili paste and chopped baby bell peppers and stir to combine. Continue to cook until beef is completely cooked through and baby bell peppers are slightly cooked. Drain fat off beef.
3. With heat off, season beef with soy sauce to your liking and add in basil. Stir to combine.
4. With lettuce on a plate, top with beef mixture and top with chopped green onions. If desired top with sriracha or chili garlic sauce.
