Southwest Jalapeño Poppers make the perfect side dish for your holiday meals or taking to a pot luck. I served along side BBQ Chicken sliders and homemade cole slaw.
Serves 5-6 people
1 tsp olive oil
1/4 red onion, diced
3 cloves garlic, minced
corn from one cob
1/2 cube cream cheese. softened
8 oz white cheddar cheese, grated
1 tbsp cumin
1 tsp salt
1. Preheat oven to 350 degrees. In a small skillet, heat olive and add in onion. Cook until soft, about 5 minutes. Add in minced garlic and corn and continue to cook until browned. Remove from heat.
2. Add softened creamed cheese and 4oz cheese to a mixing bowl. Stir in cumin and salt and add in corn mixture. Stir well until combined.
3. Slice jalapeños in half and remove seeds and ribs with a spoon. Fill jalapeños with cheese mixture and add jalapeños to a baking dish.
4. Bake for 25 minutes then remove and add remaining cheddar on top of jalapeños. Place oven on broil and broil for 5 minutes or until the cheese is bubbly.
